Yummy Holiday Treat

I hope that you all had a marvelous Christmas. I had surgery a few days before Christmas and have been resting and healing. You may be feeling the effects from all of the high fat, high calorie, sugar laden foods that show up around the holidays. I want to share this fabulous and simple recipe to get you started on your road to holiday over load recovery and load you up with vitamin C. I took this to a family party and it was the hit out of all of the desert treats there.

Fruit and Dip

1 tray of cut up fruit that is sturdy enough to dip. I bought a gift size box of clemetines and it only took me 20 minutes to peel and section the entire box. You may also use oranges, apples and pineapple although you many want to use some fruit fresh to prevent browning.

Arrange the fruit on a tray leaving the center open for a bowl of dip.

For the dip:

Prepare:
1- 3.4oz. box of Jello Cheesecake flavored instant pudding according to package directions using either 1 or 2% milk in the preparation. After strirring to set, add an 8oz. container of Cool Whip Light or Cool Whip Fat Free topping to the pudding. Place a bowl of the dip in the center of the tray and dip away! Delicious and refreshing.

What’s On Your Christmas List

As the holidays roll around we find ourselves making lists of what we would like to receive for Christmas gifts. This is great. I think it is also important to make a list of what you will give for Christmas. This doesn’t necessarily need to be in the form of tangible gifts. How about giving a smile or a hug. How about gifting your time to someone in need. This is the art of giving and receiving. We need to be open to both.
